The lead carer from a home care provider in East Croydon has entered a Fortnum and Mason competition to produce an amazing pudding for the Queen’s Platinum Jubilee.
Lee, a lead carer at Barchester’s Peony Court care home in Park Hill, entitled her entry “Peaches and Queen” and took into consideration, after much painstaking research, the Queen’s needs, wants and desires in a pudding.
Her entry is a light and fruity layered cake with jaconde sponge, peach jelly, white chocolate cream, a crunchy crumble and a peach and prosecco glaze, topped with white chocolate shaving and raspberries.

Peony Court general manager, Sandra Roche, said: “Dining is a big part of our resident’s lives here at Peony Court and we’re all really proud to support our team and their hobbies and interests.
"This competition is a fantastic way to encourage diversity in our work place and we are so pleased to be involved in the Fortnum and Mason initiative and support Lee through to the final."
