Stafford couple bring Spanish Cuisine to Trentham
Can Do Cocina will serve a variety of Spanish flatbreads, tapas and traditional sweet treats
A couple from Stafford are launching a new Spanish tapas restaurant at Trentham Estate.
Business owners Matthew Richardson and Jessica Fogarty already run a catering company and coffee shop.
Can Do Catering, which started in 2017 and is based in Stafford, Staffordshire offers catering for all events, cookery classes, cookery boxes while Can Do Coffee, formed in 2020 and based at Slaters Shopping Village, serves coffee, milkshakes and homemade sweet treats.
Can Do Cocina is their latest venture and is based at Trentham Shopping Village. The restaurant and bar will serve a range of Spanish wines, beers and a selection of cocktails, bringing an alternative food and drink offering to the area.
Items on the menu include a variety of Spanish flatbreads, tapas and traditional sweet treats such as churros.
The inside will have a modern industrial look with grey walls and black beams. It will have a very modern Spanish feel to it with lots of injection of colour through the artwork and tiles while the outside area will have sails/jumbrella and festoon lighting.
Speaking about Can Do Cocina Matthew said: “We’re absolutely delighted to be bringing our unique Mediterranean flavours to Trentham starting with a takeaway service to leave our customers wanting more ahead of the restaurant fully opening at a later date.”
The 34-year-old added: “I have been a chef since I could walk and after cheffing in Spain and my love for all things Spanish, this was the natural progression.”
Gareth Hine, Trentham Estate’s Asset Manager, said: “We always welcome and support new businesses at Trentham Shopping Village. We’re proud to house nationally renowned and independent restaurants at Trentham and I’m sure this will be a huge success with their initial takeaway only service ahead of its grand opening when lockdown restrictions ease.
“This is an incredibly difficult time for the hospitality industry but the addition of Can Do Cocina results in the shopping village occupancy rating being at an unprecedented 96 per cent which truly signals that Trentham is going from strength to strength.
“This business will be a great success and we cannot wait to see the reaction from our visitors. We wish Matthew Richardson, Jessica Fogarty and the team at Can Do Cocina all the best in their new venture.”
Takeaway is available for collection from Friday, March 5, the restaurant intends to open its doors for outside dining only from April 12 and launch fully on May 17 if national Covid-19 restrictions allow.
